This is a nice cold pasta salad and very easy to make.
1 pound bag of 'Wacky Mac' tri-colored veggie pasta
Extra virgin olive oil
Fresh garlic chopped
Fresh basil
Parmesan cheese
1 (pint) container of small fresh mozzarella balls sliced in half
1 (pint) container of grape tomatoes sliced lengthwise
Cook pasta according to directions on container. Chill completely. Put 3 large handfuls of fresh basil, 4 tablespoons of olive oil chopped garlic and two spoonfuls of Parmesan into food processor. Blend until dressing consistency. Mix pesto, mozzarella, and tomatoes with the pasta. Add salt and freshly cracked pepper. Serve cold.
